椒鹽排骨

食材 ( 4 人份 )
排骨500g
蔥花2大匙
蒜末1大匙
辣椒末1大匙
蛋1顆
太白粉1杯(電鍋量杯)
胡椒鹽酌量
【醃料】醬油1小匙
【醃料】米酒1大匙
【醃料】糖1小匙
【醃料】鹽少許
【醃料】太白粉1小匙

作法
1 準備材料

2 排骨以【醃料】醃半小時、蛋打散

3 醃好的排骨沾蛋液後沾滿太白粉不要重疊放盤中等待反潮

4 油鍋放約2杯油,油熱放一小滴麵糊,麵糊浮至油面就是溫度夠了

5 轉中火小心放入沾了粉的排骨,炸到排骨呈金黃色,拿筷子試很容易就戳進排骨肉中就是排骨已經熟了,轉大火30秒至1分鐘將油逼出後撈出瀝油

7 另一鍋熱不用放油,放入蔥花蒜末辣椒末以中火乾炒到沒有水份後放入排骨灑一些胡椒鹽拌炒

8 炒至均勻沾上調味就完成了
